Whether you wish to provide the grapes or have us do the sourcing for you, our custom crush clients receive a dedicated winemaker from start to finish. Dundee Vintner’s custom crush service supplies the space, equipment and trained staff to carry out a customer’s winemaking goals. At our 48,000 square foot custom crush winery shared with Dobbes Family Estate and Wine By Joe, our expert team will deliver on all your winemaking goals.
We have built our winemaking facilities to prioritize detail and quality over speed and quantity. As our client, you have the option to process grapes in two facilities:
Our boutique option has all the bells and whistles; hand sorting pre- and post-destemming on our 5-stage sorting line. Custom designed, high-end winemaking protocols to ensure the very best quality. A hand-controlled bladder press allowing the winemaker to make all press cuts. The fermentor size ranges from 1.5 to 8 tons.
Our second option provides faster paced processing for large scale economic efficiencies.
These facilities allow us to offer:
- Hand Sorting / Destemming / Crushing
- Must Chill / Cold Soak
- Whole Cluster Pressing
- Barrel Fermentation
- Variety of cap management methods: pump over, Pulsair, manual punch-down
Inside the winery, Dundee Vintners maintains two separate, temperature-controlled barrel rooms, a state of-the-art lab for wine analysis, and a high-quality bottling line. Once bottled, we can help with packaging, compliance, and more.
We offer a flexible range of winemaking packages starting at 500 cases, multiple varietals and tiers, and compliance and logistics help. No matter the size of your operation, these on-premise assets allow Dundee Vintners precise control over the winemaking process and enable our clients to create the highest quality of wine possible.
